When the North Georgia waters are warming in spring, crappie are an excellent game to target and for tablefare.

CRAPPIE FILLETS RECIPE
Ingredients:
- 6 crappie fillet
- 1 cup of flour
- 1/2 cup cornmeal
- oil
- 1 egg
- 1/2 c milk
- Old Bay seasoning
- salt and pepper to taste
Directions:
1. Heat oil in a fry pan or fryer
2. Whisk egg and milk together in a bowl
3. Mix flour, cornmeal, Old Bay seasoning, and salt and pepper into a separate bowl
4. Pat dry fillets and dip into egg-milk mixture
5. Dip them directly into the dry ingredients.
OPTION: Put dry ingredients into a ZipLock bag, put fillets in and shake them to coat them.
6. Drop in hot oil for about 3 minutes on each side. Done when golden brown.
